I don't think French food is "the best" but I think that what sets France apart is the quality of very average places. Unless you eat at a tourist trap, you will probably get something with high quality, fresh ingredients even at a relatively cheap price. In the US French food is overrated because the costs tend to be higher and the ingredients of lower quality (unless you are eating at very expensive meals). Another aspect that makes a huge difference when cooking French food at home (and also distinguishes good french restaurants in the US) is to make sure to use lots of fresh herbs.
You aren’t. There are a lot of people who think French food is the best _because_ it’s boring and a lot of people have boring palates.
